Hatch Chili Chicken Mac n Cheese

It’s Hatch chili season and hubs and I went to a cooking class at a local supermarket.  I used to volunteer at the cooking school so I know several of the chefs.  This class was amazing and totally inspired me to use hatch chilies in everything.  So I came up with Hatch Chili Chicken Mac n Cheese!

*Hatch chilies are actually anaheim chilies that are grown in Hatch, NM.  Just a factoid I learned in class and thought I would share.

3 Grilled Chicken Breast

1 lb cooked pasta

3 cups shredded cheese (cheddar or blend)

1/2 cup all-purpose flour

4-8 Hatch Chilies, roasted and chopped (adjust to your palette)

1 onion, small

3 cloves garlic

1 cup bread crumbs

1-2 cups chicken stock

1/2 cup half and half

1/2 stick butter

salt and pepper

Pre-heat oven to 350 degrees.

Grill chicken (seasoned with salt and pepper) and set aside.  Boil pasta according to package.  Saute onion in butter until translucent add garlic and chilies.  Bring chicken stock to a low boil.  Add flour and cook 1-2 minutes.  Toss in cheese and melt.  Add small amount of stock and half and half to loosen the cheese.  Add salt and pepper to taste.

Dice chicken, and toss with pasta and cheese.  Place in a baking dish and cover with bread crumbs.  Bake for 15-20 minutes until bubbly.

Pair your Hatch Mac n Cheese with a fruit salad and enjoy.

Recipe–Play Date Snack

With all my Costco-ing I am been forced to either freeze items or find/create new recipes to help use up the massive amounts of whatever I buy.  This time it was sour cream.  Hubs loves sour cream pound cake so I have made several in the past but wanted to do something different with the batter.  I turned it into lemon sour cream pound cup cakes with a strawberry jam filling.

I adapted this recipe from Paula Deen’s Sour Cream Pound Cake Recipe.

1 stick butter

1 cup suar

3/4 cup sour cream

1/4 teaspoon baking soda

1 1/2 cups all-purpose flour

3 eggs

1 tablespoon vanilla

1 tablespoon fresh squeezed lemon juice

Preheat oven to 350 degrees.

Throw all your dry ingredients into the mixer and add wet ingredients.  Make sure you don’t over mix otherwise the cake will be a bit tough.  Using a muffin tin fill each cup 1/3 of the way.  Then add a layer of your strawberry jam (recipe below) and finish with the lemon sour cream batter.

Bake about 20-30 mins.  Note: My oven bakes crazy so I usually set my temperature a bit lower and end up having to add minutes and watch and add minutes, etc.

Yields about 12 -15 cupcakes.

Strawberry jam

1 lb fresh strawberries, washed, stems cut off and diced

1/4 cup sugar

1-2 tablespoons water

Simmer all on the stove until forms a jam like consistency.  Also great over ice cream.

So go and start a pot of coffee and have an afternoon snack, perfect for a play date.

Recipe–Blended Coffee Re-make

Ok so a few weeks ago I did a iced coffee drink.  Check it out here.  I made another using the same coffee ice cubes and it’s even better!  Watch out Starbucks I am keeping my $6 and making this one!

6 coffee ice cubes

1/2 cup half and half

2 tablespoons vanilla extract

1/4 cup powdered sugar

Blend all of these in the blender and voila, you have a tasty treat.  Now I splurged on the half and half so you could use milk but the half and half makes it amazing!  Just do an extra 5 minutes on the treadmill and enjoy!  Yields about 12 ounces.

Recipe–Sweet Potato Mash

This is a great side dish for pork, chicken or beef.  Since I have been making veggie mash for my little one and I thought we could have an adult version of sweet potato mash.  Hope you enjoy this side dish.

6 medium sweet potatoes

4 tablespoons butter

1/3 cup cream or half and half

1 teaspoon cinnamon

1 tablespoon brown sugar

Peel and dice the sweet potatoes.  Boil until fork tender.  Using a hand mixer cream potatoes, cream and butter until smooth.  Mix in cinnamon and brown sugar.  Yields four large servings.

Yum!

Recipe–Brownie Balls

I love cake balls but thought I would do a twist on them for the baptism reception.  I came up with these brownie balls and they are amazing!  Impossible to eat just one.

Here is the scoop.

1 box of your favorite brownie mix

1/3 cup powdered sugar

6-8 ounces cream cheese

Bake the brownies according to the box.  I used a box of Dunkin Hines.  Let them cool completely.  Mine turned out a bit crunchy on the side so I just cut that part off and threw away.  Crumble the brownies into small pieces.

Whip the cream cheese and powdered sugar together and fold into the brownies.  You might need to add a tiny bit of milk to loose up the mixture.  Form into small balls, place them into small muffin papers and into the refrigerator.

Now they are fantastic as is but I thought, let’s spice them up a bit.

I rolled each one into a different topping.  (L-R walnuts, powdered sugar, chocolate chips, coconut)

Pinned It Did It–Iced Coffee Remake

Pinterest for me is like reality tv, a big time suck but I just can’t stop.  Currently I have 1706 pins, which is nothing to those who were early adopters of Pinterest.  I have decided to actually start doing the things I have pinned which I am sure will lead to more pins and a long list of things to do.  Here is the first and can now be found on my Pinterest Board “Pinned It Did It.”  Want to see what else I have pinned click on my button.

4 coffee ice cubes

1 cup of almond milk or cow’s milk

I love iced coffees and this is super simple but I found it a bit blah for my taste buds so I blended it up with a better result.

1 cup of almond milk/cow’s milk

1 tablespoon aguve nectar

1 teaspoon vanilla extract

Throw all ingredients in the blender and let it whirl for a minute or two.

I think this whipped iced coffee had a nice froth and great taste.  A definite keeper for a morning treat or afternoon pick me up.

Recipe- Strawberry Lemonade Frozen Yogurt

I sometimes feel like a mad scientist when I am in the kitchen concocting and poof something turns out really yummy!  Well this one worked and it is my new favorite late night snack!  Here we go.

Strawberry Lemonade Frozen Yogurt

3 tablespoons greek yogurt

1/4 cup fresh lemon juice

3 tablespoons strawberry puree (recipe below)

3 tablespoons agave nectar

9 frozen strawberries

juiced lemons to use as cup for frozen yogurt

Trim the bottom of the lemons so they will stand up properly.  Put all ingredients in a blender and process until all are incorporated.  Evenly pour the yogurt mixture in the juiced lemon cups.  Place in freezer.

I originally set out to make strawberry lemonade but had a mad scientist moment and thought this would be a good mixture.  It turned out amazing and really is a great snack.  For the strawberry puree I simply cooked 1 cup fresh strawberries and 1/3 cup sugar over medium heat until it cooked down.  I did add a tablespoon of water and one of lemon juice to thin out the mixture.

This is seriously a great snack or a treat for a summer time party.  Enjoy!

Recipe–Tortilla Bake

I just made this up the other night and it turned out pretty good so I thought I would share.


1 pound ground beef

1/2 pack of taco seasoning

1 can diced tomatoes (low sodium), drained

1/2 onion, chopped

6-8 mushrooms, sliced

5 cloves garlic, diced

4 flour tortillas

2 cups cheese (cheddar or a mix), shredded

1 avocado

1/2 cup sour cream

Olive Oil (just enough to saute onions and mushrooms)

Pre-heat oven to 350 degrees.

Mash the avocado and sour cream together.  Set aside.  Saute the meat, garlic and taco seasoning together in one pan and the onions and mushrooms in another with some olive oil.  After meat mixed with sautéed onions and mushrooms and add drained can of tomatoes.  Heat tortillas for about 30 seconds on each side.

Line 8 x 11 pan with aluminum foil for easier clean up and spray with pam.  Layer tortillas, avocado mash meat and 1/4 of cheese twice finishing with cheese on top.  Bake 10-12 minutes until bubbly and serve.

NOTE:  I actually didn’t use taco seasoning because I didn’t have any on hand.  I used cumin, chili powder and some Tony’s but I think taco seasoning would be good too.  Leave a comment and let me know how the taco seasoning tastes in the dish.

Recipe- Jalapeno Cornbread–20 Minute

My hubs loves jalapeno cornbread and I don’t always have time to make it from scratch.  So here is my version made from a box of Jiffy Corn Muffin Mix.  I don’t normally cook from boxes and cans but this is delish, so we have added to the dinner time rotation.  This is ready from start to finish in 20 minutes.

Jalapeno Cornbread

Here is the recipe:

1 box Jiffy Corn Muffin Mix

1/2 can (12 oz) cream corn

1/2 jalapeno, diced

1 egg

cayenne pepper

Preheat oven to 400 degrees.  Mix muffin mix, cream corn, diced jalapeno and egg with a wire whisk.  Spray 8×12 pan with cooking spray and pour mix in pan.  Sprinkle with cayenne pepper to taste and swirl with knife.  Bake 15-20 minutes until set.  Let cool and serve.

Recipe- Apple & Cranberry Cream Cheese Muffins–Dessert

I was craving something sweet and pulled out some items out of the refrigerator that needed to be used and came up with this.  These dessert muffins turned out better than expected and the butterscotch topping is simple but really adds a great topping.

Apple and Cranberry Cream Cheese Muffins

Here is the recipe:

Yields 12 Muffins

3 medium apples

1/2 cup fresh or frozen Cranberries

1/4 cup freshly squeezed OJ (1 large orange)

2 tablespoon sugar

4 tablespoon butter, melted

1 package of honey graham crackers

1 tablespoon vanilla

2/3 cup powdered sugar

10 ounces cream cheese

medium muffin tin and papers

Pre-heat oven to 350.  Pulse graham crackers and melted butter in a food processor until the consistency of sand.  Evenly divide graham crackers and press into muffin tins.  Bake 8 mins.  Take out of oven and cool.

Peel apples and dice.  Squeeze 1 large orange.  Cook apples, cranberries, sugar and oj on medium heat until soften and cranberries pop.  OJ may need to be adjusted if using frozen cranberries.  Begin cooking and slowly add juice if mixture is too dry.  Cool.

With a hand mixer beat the cream cheese, vanilla and powdered sugar until combined.  Gently fold the fruit compote into the cream cheese until well combined.  Evenly divide fruit-cream cheese mixture on top of graham cracker crust.  Bake 18-20 minutes.  Cool completely on wire rack and place in refrigerator.

Serve cold with a butterscotch topping.

Butterscotch Topping

Melt butterscotch chips with a splash of heavy cream in a double boiler.  Drizzle the melted topping over the muffin.  Could use carmel in place of butterscotch.
