Chevrons and Carrots

I have seen chevron patterns all over the place with varying width and colors.  So I thought the little one needed her own chevron bubble!  So I set out to make my own and here is how it turned out.  Kinda impressed with my fly by the seat of my pants sewing.

I sewed each of those zig zags together and made my own bubble pattern.  Still needs some work but I think it turned out cute and with an obnoxiously large flower who doesn’t think she is the cutest baby ever!  Of course mom is biased.  Also I think this is the only time in life that fat rolls are cute!

Now for carrots.  We started solids recently.  Just some steamed carrots and a little of the cooking water.

She enjoyed her high chair but had no idea what was about to happen…..

A little nervous but she went with it…..

Still not sure what this is that is getting shoved into her mouth….

But it seems spitting it out seem to be better than swallowing.  So we will try again.

Recipe–Tortilla Bake

I just made this up the other night and it turned out pretty good so I thought I would share.


1 pound ground beef

1/2 pack of taco seasoning

1 can diced tomatoes (low sodium), drained

1/2 onion, chopped

6-8 mushrooms, sliced

5 cloves garlic, diced

4 flour tortillas

2 cups cheese (cheddar or a mix), shredded

1 avocado

1/2 cup sour cream

Olive Oil (just enough to saute onions and mushrooms)

Pre-heat oven to 350 degrees.

Mash the avocado and sour cream together.  Set aside.  Saute the meat, garlic and taco seasoning together in one pan and the onions and mushrooms in another with some olive oil.  After meat mixed with sautéed onions and mushrooms and add drained can of tomatoes.  Heat tortillas for about 30 seconds on each side.

Line 8 x 11 pan with aluminum foil for easier clean up and spray with pam.  Layer tortillas, avocado mash meat and 1/4 of cheese twice finishing with cheese on top.  Bake 10-12 minutes until bubbly and serve.

NOTE:  I actually didn’t use taco seasoning because I didn’t have any on hand.  I used cumin, chili powder and some Tony’s but I think taco seasoning would be good too.  Leave a comment and let me know how the taco seasoning tastes in the dish.

Costco-ing

Today was my monthly trip to Costco.  I buy all my groceries there and very rarely go to a chain grocery store unless I need a speciality item.  Although I choke as the cashier reads the total, I love the convenience of only having to grocery shop once a month.  This little trip takes a whole day of work separating the ginormous bags of food into smaller portions for my freezer.  Here are a few items I picked up.

I found this amazing artichoke and jalapeno dip.  Paired with some carrots it is a yummy snack.  These carrots I put in small freezer bags and vacuum sealed them for later.

And I found the Mochi–aka little balls of ice cream goodness.

And I LOVE their flowers.

And I LOVE this little nugget.  It was her first time to ride in the cart like a big girl!

Off to freeze more goodies from my Costco-ing!
